This is an increasingly popular cut as when cooked long and slow creates an incredible richly flavoured dish. Approx 2 x 600g

This cut is layered with fat and meat and so when cooked very long and slow can create a ‘confit’ taste, rich moist and succulent.
Herdwick sheep are Lakeland's native sheep breed, they eat a natural diet of fell grasses and heather. ‘Hogget’ is sheep meat from an animal between 1-2 years old and is a delicious cross between tender lamb and full flavoured mutton. Our Herdwick Hogget is dry aged for 7 days to enhance the texture and flavour.
